Go Veggie and Vegan with Matt Tebbutt: Episode 2

Matt starts with a vegan spinach and ricotta cannelloni, using oat milk for the béchamel and a flavour-packed easy tomato sauce made in the oven. This vegan twist on comfort food is perfect for freezing and a great option for preparing in advance for a delicious dinner.

This show’s hero veg is beetroot. Matt explores versatile ways to use it beyond pickling. Matt’s beetroot gnocchi is a colourful veggie twist on the traditional Italian dumplings, proving homemade gnocchi is easy, delicious and fun. Using beetroot to give extra texture to the dough, it’s finished in a sage brown butter and drizzled with a fresh pesto, parmesan and whole pine nuts for added crunch. Our resident veggie chef expert Jane Baxter is back in the kitchen showing Matt a delicious pumpkin, corn and goats cheese gratin dip that’s great for sharing. Matt isn’t a fan of tofu, so visits a Chinese takeaway to get a better understanding of how versatile it can be. He samples some tofu dishes that have been available nationwide for years and should convert the sceptics. Matt shows how to make the popular treat of churros at home, which are so much tastier than the shop-bought options. His special fun recipe made with sweet potatoes is better than anything you can buy at the supermarket. Matt’s crispy cinnamon sugar-dusted treats are served with a rich chocolate orange dipping sauce that would make them perfect for entertaining or a family night in.

Matt‘s friends Sam and Shauna visit from Barry Island to make Matt a black bean cassoulet with smoked beetroot that’s inspired by their love of Louisiana and southern American cooking. The beetroot are going to be smoked by putting them on a tray with charcoal, wrapped in cling film and roasted in the oven.

Inspirational recipes to help anyone keen to eat more veg and less meat, without saying goodbye to their favourite meals.

For centuries it was uncertain what caused the pestilence of 1348, until a vast plague pit was uncovered in Smithfield, London in the 1980s. The find revealed the bones of hundreds of victims of the 14th century pandemic.

Now stored in the basement of the Museum of London, Lucy learns how DNA extracted from the skeletons enabled scientists to finally identify a bacteria called Yersinia Pestis – a pathogen to which the mediaeval population had no immunity.

In little more than a year, almost half the population had been wiped out by the Black Death. Lucy investigates what this sudden loss of life meant for the church, landowners and for the those who survived.

Exploring the social structure of mediaeval England, made up largely of rural peasants indentured to landowners, Lucy discovers a rare and remarkable set of documents: the Court Rolls of the Suffolk village of Walsham the Willows, providing a perfect microcosm of life across the country before, during and after the pandemic.

Lucy discovers how, despite the unfolding apocalypse, rather than shaking people’s belief in God, it entrenched their faith. Many went on devotional pilgrimages to sacred sites like Canterbury Cathedral.

Despite the devastation, the plague propagated a shake-up of the status quo. Workers were in short supply and could demand higher wages, shifting the balance of power. Women occupied professions and roles that were previously closed to them and acquired an independence and status that would previously have been impossible.
